90% Grand Cru Chardonnay | 10% Grand Cru Pinot Noir
This cuvée is designed for those who love the mineral “snap” of the Côte des Blancs but desire the soft red fruit aromatics of a prestige Rosé. By keeping the Pinot Noir component low, Olivier Bonville ensures the wine remains remarkably fresh and airy.
The Pinot Noir is added as a “still red wine” (vin rouge) to the Chardonnay base, providing a delicate salmon-pink hue and a structural “fleshiness” that complements the chalky tension of the Avize fruit.
The Experience: Fresh, sophisticated, and vibrant. This is a “Chardonnay-focused” Rosé that prioritizes elegance and floral notes over heavy berry flavors.
Aromas: A very refined and high-toned nose. It opens with wild strawberries, raspberries, and redcurrants, followed by citrus notes of pink grapefruit and a delicate floral touch of rose petals and white blossoms.
Palate: Crisp and precise. The fine, silky mousse carries flavors of crunchy red fruit and pomegranate. Thanks to the Grand Cru Chardonnay base, there is a prominent “stony” minerality that vibrates through the mid-palate.
The Finish: Long and remarkably clean. It concludes with a refreshing citrus zest and a subtle saline edge, characteristic of its Avize origins.
