Nirugame (often translated as “Nirvana Turtle” and sometimes nicknamed Niragame) is the series’ bold exploration of low-polishing-ratio brewing.
The Concept: While modern premium sake typically strips away the outer layers of the rice grain (often polishing down to 50% or lower), Nirugame intentionally utilizes a very low milling rate—usually leaving 80% to 88% of the rice grain intact.
Historical Inspiration: This minimalist polishing mimics the techniques of the Edo period, aiming to capture the rustic, unadulterated essence of the rice. Historically, low-polished sakes risk becoming heavy or cloying, but Aramasa applies cutting-edge ginjo techniques and precise acidic control to craft a remarkably clean, structured, and complex profile.
Flavor Profile: Despite its heavy grain makeup, Nirugame delivers a surprisingly vibrant and transparent profile. It features layered aromas of grains, nuts, and subtle woody notes from the wooden vats, matched with a powerful core of deep umami. This is anchored by Aramasa’s signature, razor-sharp acidity and a clean, slightly astringent finish that prevents heaviness.
Variations: It is occasionally released in limited variants, such as the Nirugame Spark, which introduces natural bottle-fermented effervescence to the low-polished base.
