Aramasa “Colors Earth” (Ubutsuchi) is a standout expression in the Aramasa “Colors” series, serving as a profound tribute to Akita’s agricultural roots. Crafted with a deep commitment to terroir, this sake utilizes 100% pesticide-free, organically grown Rikuu 132 rice—a heritage variety from the Taisho era born from the legendary Kamenoo and Aikoku strains. Produced using the ancient Kimoto method, it is fermented and matured in traditional wooden Kioke cedar barrels, highlighting a raw and untamed expression of the land.

On the nose, Earth offers an ethereal and fresh aroma featuring notes of honeydew melon, white peach, pear, and gooseberry, beautifully layered with subtle florals and a touch of cedarwood. The palate delivers a harmonious blend of juicy, fruit-forward sweetness and sophisticated umami, supported by a soft texture, coquettish acidity, and a light, conifer-like astringency. The experience concludes with a clean, refreshing finish characterized by a lingering mineral thread and a delicate, savory earthiness.

Founded in 1852 in Akita Prefecture, Aramasa Shuzo is one of the most innovative and historically significant sake breweries in Japan. Helmed by the visionary 8th-generation owner Yusuke Sato, the brewery famously birthed Kyokai No. 6 (No. 6 Yeast)—the oldest surviving sake yeast strain used across the country today.

Aramasa operates under strict, uncompromising modern principles rooted in history:

  • 100% locally grown Akita rice (often organic or pesticide-free). 
  • Exclusive use of the traditional Kimoto brewing method (spontaneous lactic fermentation).
