Aramasa “Amaneko” (Shiro Koji Shikomi Junmai / “White Cat”) is one of the most distinctive and celebrated creations in Aramasa’s experimental Private Lab series. Breaking away from traditional sake conventions, Amaneko is brewed using white koji—a specialized mold traditionally reserved for crafting shochu spirits. This technique generates a high concentration of natural citric acid, resulting in a striking, vibrant profile that challenges conventional boundaries while maintaining supreme elegance.

Founded in 1852 and located in Akita Prefecture, Aramasa Shuzo (????) is one of the most innovative, influential, and historically significant craft sake breweries in Japan. Under the visionary leadership of the 8th-generation owner Yusuke Sato, the brewery has redefined modern premium sake by aggressively bridging ancient craftsmanship with radical transparency.

Aramasa holds a legendary status in sake history for discovering Kyokai No. 6 (No. 6 Yeast) in 1930, which is the oldest surviving sake yeast strain in Japan. Today, the brewery operates under a strict, uncompromising set of modern artisan principles:

  • 100% Local Akita Terroir: Aramasa exclusively uses rice grown within Akita Prefecture, maintaining a close-knit “agriculture-brewing integration” system that includes extensive organic and pesticide-free farming. 
  • Pure Junmai Standard: The brewery completely eschews the addition of brewers’ alcohol, artificial acidulants, and enzymes, producing strictly Junmai-category sake. 
  • Traditional Kimoto Method: They rely exclusively on the labor-intensive, natural Kimoto method for spontaneous lactic acid fermentation, lending deep structure and umami complexity to their portfolio. 
  • Wooden Vat Aging (Kioke): Fermentation and maturation take place primarily in traditional wooden cedar vats, a practice supported by the brewery’s own on-site cooperage workshop to preserve authentic textures and subtle woody aromatics.
