CUVEE ACACIA:
Acacia is known to be more neutral in taste for aging compared to oak.
This property is a perfect match for the Aligoté grape: we can get the
complexity imparted by barrel ageing, without the aromatics brought by the oak. This way, the wine keeps the freshness of the Aligoté while adding a layer of depth to the cuvee.
Formerly in IGP Sainte Marie la Blanche, the cuvée Acacia will now be proposed in Bourgogne Aligoté for vintage 2023.
