Cuvée Simone is Château de Pommard’s crown jewel, named in honor of the family who tended the plot for decades. Planted in 1986 on an exceptionally clay-rich soil profile historically classified as a premier première cuvée, this micro-terroir yields a remarkably delicate yet intense expression of Pinot Noir. Managed biodynamically—including traditional horse-plowing and an extended barrel-aging program—this rare cuvée stands apart from standard Pommards by trading brute power for sublime elegance.

Tasting Profile An electric and intensely energetic nose bursts forth with a captivating bouquet of fresh red roses, dried field flowers, sweet raspberry, plum, and subtle hints of ginger and clove pain d’épices. On the palate, the wine delivers a masterclass in texture: dense, pure, and fresh, underpinned by a tight, remarkably silky and velvety tannic structure. Notes of dark cherry and fine oak seamlessly weave into a long, vibrant, and gently saline finish.

Serving & Cellaring While showing wonderful openness and a seductive fruit-forward charm today, Cuvée Simone possesses the backbone and immaculate balance to gracefully evolve in the cellar for the next 20 to 30 years. Decant gently 30–60 minutes prior to serving. Pair with fine poultry, roasted duck, or delicate game dishes.
