In the winery, the Jouard family's commitment to traditional craftsmanship is absolute. The wines age for eleven months in oak barrels — one-third of which are new — where malolactic fermentation enhances complexity and aromatic depth. The cuvées then rest for two months in tank, where they may be lightly fined or filtered for clarity before bottling under nitrogen protection, preserving every nuance of freshness and precision through to the glass.
In the vineyard, soils are worked through careful ploughing to avoid herbicides entirely, and vines are tended with reasoned, sustainable protection. Harvest is carried out by hand — parcel by parcel, only when the grapes reach perfect maturity. It is this patience and precision, carried from generation to generation, that gives each Jouard cuvée its unmistakable sense of place.
