Kiyasho Shuzo (Mie Prefecture, Japan)

Founded in 1818 and located in Nabari City within the fertile Iga Basin of Mie Prefecture, Kiyasho Shuzo (?????) is the producer behind Jikon (??)—one of the most coveted, critically acclaimed, and sought-after sake brands in the world.

Originally operating as a lumber merchant (reflected in the name “Kiyasho”) before transitioning into a local brewery, the small family-run estate spent generations producing modest amounts of regional table sake. A monumental turning point occurred when the 6th-generation head and master brewer, Tadayoshi Onishi, took over operations. Inspired after experiencing the paradigm-shifting quality of legendary artisan sakes, Onishi completely overhauled the brewery’s philosophy to prioritize uncompromising quality, precision, and respect for ingredients.

In 2005, he introduced Jikon, a label derived from a Zen Buddhist phrase meaning “to cherish the present moment” (akin to carpe diem). The brand achieved instant national prominence when it won a Gold Prize at the prestigious Japan Sake Awards just a year after its debut, catapulting the brewery into elite status.
