Description
Aramasa “Amaneko” (Shiro Koji Shikomi Junmai / “White Cat”) is one of the most distinctive and celebrated creations in Aramasa’s experimental Private Lab series. Breaking away from traditional sake conventions, Amaneko is brewed using white koji—a specialized mold traditionally reserved for crafting shochu spirits. This technique generates a high concentration of natural citric acid, resulting in a striking, vibrant profile that challenges conventional boundaries while maintaining supreme elegance.
Technical Highlights
* Brewing Method: Crafted using the traditional Kimoto method and fermented in traditional wooden cedar vats (Kioke).
* Koji Type: Dual-use featuring standard sake koji alongside shochu white koji (Shiro Koji).
* Rice: 100% locally grown Akita Sakekomachi.
* Polishing Ratio: 55% (koji rice) / 60% (kake rice).
* Alcohol: 13% ABV.
Tasting Notes
Amaneko bridges the gap between sophisticated sake and crisp, white wine-like refreshment:
Nose: An uplifting, aromatic bouquet of fresh pomelo, kabosu, crisp green apple, and juicy nashi pear, layered with delicate white wildflowers and a subtle undercurrent of conifer from the cedar tank.
Palate: Light, taut, and impeccably balanced. A gentle, soft sweetness and mild umami provide a smooth foundation, beautifully counterbalanced by signature grapefruit-like acidity and a clean, refreshing citrus-pith astringency.
* Finish: Crisp, sharp, and revitalizing with a lingering mineral and citrus snap.
