100% Grand Cru Chardonnay | Single-Year Expression

This cuvée is a masterclass in the “Avize” style a village known for producing Chardonnays that are more muscular, exotic, and structured than those of its neighbors. Olivier Bonville selects the best parcels from the estate’s mid-slope vineyards to create this vintage, focusing on vines that have reached a perfect balance of maturity. The 2015 release is a “vin de gastronomie,” a wine with enough body and complexity to be served throughout a high-end meal rather than just as an aperitif.

The Experience: Opulent, broad-shouldered, and deeply mineral. A vintage that shows the “sunny” side of Champagne without losing its crystalline core.

Aromas: An intense and evolving bouquet. It opens with ripe yellow peach, candied lemon, and dried apricots, followed by the classic Bonville “gourmet” layer of toasted brioche, fresh butter, and roasted hazelnuts.

Palate: Rich and voluminous. The palate is coated with flavors of honeyed citrus and white plum, supported by a very fine, creamy mousse. The mid-palate shows great density, a hallmark of the 2015 growing season.

The Finish: Powerful and persistent. It concludes with a signature chalky grip and a salty mineral tang that cleanses the palate and invites another sip.
