Christophe Patrice insists on vinifying his wines entirely in temperature-controlled stainless steel to protect the racy, crystalline nature of the fruit. By using low-density vine planting and single Guyot pruning, he focuses on quality over quantity, resulting in a village-level wine with the concentration often reserved for Premier Crus.
The 2023 vintage is particularly expressive, offering a “sunny” disposition with ripe fruit that is beautifully balanced by Chablis’ signature mineral snap.
The Look: A brilliant pale gold with elegant green reflections.
The Nose: Aromatic and sharp. It opens with white flowers (jasmine and hawthorn) and citrus zest, followed by deeper notes of green apple, white peach, and a distinctive hint of wet gravel and flint.
The Palate: Racy and “steely.” The entry is lively, lead by grapefruit and lemon curd, while the mid-palate reveals a subtle creaminess from light lees aging. It feels “vertical” and energized.
The Finish: Long, clean, and refreshing. It leaves a lingering saline and stony impression that makes it incredibly food-friendly.
