100% Chardonnay
“Cuvée H” is crafted to highlight the “H” in Hervé and the “H” in Heritage. Sourced from south-facing clay-limestone plots in the Côte de Beaune and the surrounding plains, this wine is designed for purity and precision. Unlike many generic Burgundies, this cuvée undergoes a sophisticated fermentation process—partly in stainless steel to maintain zest, and partly in French oak to develop a “creamy” mid-palate and structural depth.
The 2023 release is a “bright” wine, characterized by a perfect balance of ripe orchard fruits and a crisp, mineral-driven spine.
The Look: A pale, shimmering straw-gold with emerald highlights.
The Nose: Fresh and inviting. Expect immediate aromas of white flowers (acacia and hawthorn), followed by green apple, lemon curd, and a subtle touch of fresh hazelnut.
The Palate: A harmonious blend of texture and tension. It leads with succulent pear and citrus zest, leading into a mid-palate that feels rounded and “polished.”
The Finish: Clean, elegant, and surprisingly long, with a signature stony minerality that persists on the tongue.
